At the heart of this project is the very first French organic gin, made from an exceptional Sichuan pepper tree planted over twenty years ago on the Decroix farm. The berries of this pepper plant, with their powerful, spontaneous aroma, form the base note of this gin. They are complemented by coriander, cardamom, ginger, angelica and, of course, juniper berries indigenous to the Montmorélien hillsides. After macerating for 48 hours in organic wheat alcohol, the botanical blend is distilled in a Stupfler® still, renowned for the quality of its aromatic expression. This gin stands out for its taste, finesse and sense, offering an aromatic imprint strong enough to retain its personality, whether in a gin and tonic or in cocktails.
